chicken kolambu

This is my home style chicken curry.I used to try this many times on my own and never got the exact taste of my mom.But today after a long struggle i got near to that.
Here is my chicken taste it..


Ingredients:

  • chicken-1kg
  • oil
  • cinnamon-1 stick
  • clove-3
  • star anise-1
  • green chilli-3
  • big onion-1/3(chopped finely)
  • small onion-1(1/2 )cups[saute the small onion and grind it]
  • ginger garlic paste-1/2 cup
  • turmeric powder-1/2 tbsp
  • curry powder-4 tbsp
  • curry leaves
  • coriander leaves
  • salt

Preparation:
  • Heat oil in a pan
  • Add cinnamon,clove and star anise
  • Add big onion and fry well
  • Add Ginger Garlic paste
  • Add green chilli,curry leaves,turmeric powder
  • Add chicken and cook for five minutes
  • Mix the grinded onion and curry powder to the chicken
  • Add salt and enough water
  • Boil till the chicken get cooked
  • Garnish it with coriander leaves

Tasty Curd Rice

I came to know this recipe from one of my friend..i tasted her curd rice and decided to do it myself..its only curd rice but really its soo tasty


Ingredients:
  • Rice
  • Curd-As needed
  • Milk-1/3 cup
  • Onion-1/2(finely chopped)
  • Green chilli-2(finely chopped)
  • Green seedless grapes-1 cup(chopped)
  • Carrot-1/2(grated)
  • Coriander leaves
  • Salt-to taste
  • Oil
  • Mustard seed
  • Urad dal


Preparation:
  • Mash the rice and mix all the above till salt
  • Heat the oil
  • Fry the mustard and urad dal
  • Pour that into the curd rice

Buttermilk shake

This is really a simple recipe which my mom used to do on hot summer days

Ingredients:
Curd-1 cup
cold water-as needed
fresh curry leaves
dry chilli
mustard seed
small onion-1
ginger
coriander leaves
lemon
salt

Method:
  • Mix curd and water with that add some salt
  • Mix well in blunder
  • Crush the ginger and onion and add to it
  • squeeze lemon into it and add coriander leaves
  • Heat the pan,add oil
  • Add mustard seeds,after it crackle add dry chilli and curry leaves
  • Add this into the curd mixture
  • mix well everything and shake it

    Mushroom Gravy

    I like mushroom more than any thing in the veggi.I tried this recipe for my friend and it turned out good...


    Ingredients:
    • mushroom
    • oil
    • mustard
    • cinnamon stick-1
    • clove-4
    • star anise-1
    • bay leave
    • cardamom-2
    • ginger garlic paste-1 1/2tbs
    • green chilli-2
    • onion-1
    • tomato-3
    • turmeric powder-1/4tbs
    • chilli powder-1/2tbs
    • coriander powder-1tbs
    • garam masala-1/4tbs
    • fennel powder-pinch
    • cumin powder-pinch
    • sugar-1/4tbs
    • coconut grated-2tbs
    • curry leaves and coriander leaves
    Method:
    1. heat the oil in a pan
    2. add mustard seeds and let them crack
    3. Add cinnamon ,clove,star anise,bay leaves,cardamom
    4. Add onion and fry till it turns brown
    5. Add ginger and garlic paste,green chilli 
    6. when the smell goes add tomato and cook till it mashes
    7. Then add all masala with mushroom
    8. sautee it for five minutes
    9. Add water and cover it till mushroom get cooked
    10. Add sugar and coconut before 2 minutes
    11. garnish it with coriander leaves

    Gulab Jamun



    Round gulab jamun was a question mark(?) when i started my preparation.
    But when it came to an conclusion i saw this wonderful gulab jamun
    floating in a sweet sugar syrup
    let me explain the detail...


    Ingredients:
    • gulab jamun mix(whatever you prefer)
    • milk
    • sugar
    • water
    • cardamom 
    Preparing dough:
    1. For 1 cup measure of  mix add 1/4 measure of milk
    2. Make the dough so soft
    3. Leave it aside for five minute
    Syrup:
    • Equal measure of sugar and water should be boiled
    • Add cardamom powder and rose water to it

    Method:
    • Make small rounds from the dough
    • fry it in the oil and put it in the syrup

    crispy vadai

    This recipe is so healthy and easy to make
    some tips make this recipe perfect.


    Ingredients:
    • urad dal
    • onion(1/4)
    • cumin seed(1/2 tbs)
    • hing(pinch)
    • curry leaves
    • pepper corns(crushed)
    • oil
    Preparing urad dal:
    • soak urad dal for atleast 5 hours.
    • grind it with little or no water(consistency is more important)
    • Add pepper corns,hing,curry leaves,cumin seeds into urad dal
    • beat the grinded urad dal with hand
      Checking for right consistency:
      • put small amount of batter in a bowl of water
      • check whether its floating.
      • if its floating then its right consistency
        Making vadai
        • Add onion to the batte
        • Heat the oil
        • take batter in hand and make a hole 
        • flip it in the oil
        • fry it till brown

          Tilapia-My style

                              
           I used to think long day "what to prepare for dinner?"
          suddenly strike with an idea 
          tonight its going to be tilapia with onion and some tomato
          its easy recipe      
                    
          Ingredients:
          • ginger garlic paste-1tbs
          • chilli powder-1 1/2tbs
          • salt 
          • turmeric powder-1/4tbs
          • lemon -1
          • fish masala or chicken masala
          • red chilli flakes
          • pepper powder
          • parmesan cheese (grated)
          • tilapia fish(skin removed and frozen)or what ever you wish
          • onion
          • tomato                      
                
           Quick dinner:
          1. Make some paste using chilli powder,ginger garlic paste,lemon juice,fish masala,salt
          2. Apply this paste on the fish on both sides
          3. Keep it aside for half an hour
          4. Heat the skillet and add 2 spoon oil
          5. Put the fish in the skillet and cook for 2-3 minutes
          6. Add red chilli flakes,parmesan cheese and pepper powder on the top side
          7. Later flip the fish and cook for 2 minutes
          8. Add chilli flakes,parmesan cheese and pepper powder on other side of the fish
          note:
           Toss some sliced onion and tomato in the skillet.serve this with some corn and tossed bread

          Keema-Turkey




          This can also be done with chicken,mutton,beef or lamb
          choice is yours

          Ingredients:
          Turkey-Grounded
          oil-2tbs
          cinnamon-1 stick
          black cardamom-1
          green cardamom-2
          clove-4
          star anise-1
          cumin seed-1/2tbs
          green chilli-2(finely chopped)
          ginger garlic paste-2tbs
          onion-1/2(finely chopped)
          chilli powder-1/2tbs
          turmeric powder-1/4tbs
          curry leaves
          pepper powder-1/4tbs
          salt
          coriander leaves
          water


          Method:
          1.Heat oil in a pan
          2.Add cinnamon,cardamom,clove,star anise and cumin seed
          3.Add chopped onion and curry leaves,saute it till transparent 
          4.Add ginger garlic paste and green chilli 
          5.Add turkey and mix it well with little water
          6.cover it and cook for five minutes
          7.Add turmeric and salt
          8.finally add pepper powder and cook till its tender
          garnish with coriander leaves


          note:
          serve this with chappathi or paratha.

          Tasty and Healthy-Asparagus

          when i first saw this asparagus i had no idea that one day im going to cook this.
          I didnt feel like eating that.It looked wired and
          thought to myself "why should i eat asparagus"
          But after knowing about asparagus which is low in calories,no cholesterol and low in sodium
          "why i shouldn't eat asparagus"when its tasty and healthy
          so lets enjoy this


          Ingredients:
           Fresh Asparagus-5(cut the bottom edge,remove the skin leaving the head part and cut it into small pieces)
          cumin seed-1/2tbs
          tomato-1(diced)
          ginger and garlic chopped
          chilli powder-1/2tbs
          fennel powder-1/4tbs
          garam masala-1/4tbs
          coriander leaves chopped
          salt                                             
                                                        
          Method:
          1.Heat the pan in medium and add oil
          2.Put cumin seed in it
          3.Then add ginger and garlic
          4.when the smell of it disappears add tomato
          5.Add chilli powder,fennel powder,garam masala and salt
          6.finally add chopped asparagus and mix it well
          7.pour little water and close the lid
          8.After 5 mins stir it and cook till the asparagus get cooked
          garnish it with coriander leaves


          note:
          thin stems will have more taste.

          Easy but Tasty-Tomato Rice



          For long time i tried only new recipes which my mom haven't done in her kitchen
          but today let me try from my mom's list
          i called her, asked about tomato rice which she used to do in her own style.
          hmmm...she told me the procedure
          but i didnt have some ingredients in hand 
          so i tried my own style
          it came perfectly than i expected
          try this you too will love it

          Ingredients:
          basmathi rice-2cups
          cinnamon-1 stick
          clove-4
          cardamom-2
          star anise-1
          green chilli-3
          onion-1/2
          tomato-4 large sized
          curry leaves
          coriander leaves
          mint leaves
          chilli powder-1/2 tsp
          fennel powder-1/4tsp
          chicken briyani mix-1tsp
          ginger-1 inch
          garlic-3 pod
          salt
          turmeric powder-1/4 tsp
          water as needed
          method:
          1.Heat the pan,add oil
          2.Throw cinnamon,clove,cardamom,star anise
          3.add ginger and garlic
          4.onion,green chilli
          5.sautee them till transparent 
          6.add tomato
          7.later add mint leaves,coriander leaves
          8.after the oil ooses out add all the powder mentioned above and add water according to rice.do not add too much water
          9.cover it and cook till the rice get cooked
          10.finally add little ghee 


          note:
          if you feel water is too much.drain it before the rice get cooked
